Eggplant pizza

This is actually a dish I had been thinking of making for a very long time  Finally had the time to make it last night.

Trust me, it was worth the time and effort.

Ingredients;
2 eggplants
2 tbs olive oil
Pinch of salt
Tin of tomato paste
4 cherry tomatoes
Fresh Mozzarella
Shredded cheese

Instructions;
1.preheat oven at about 200C

2.Slice your eggplant lengthwise about 2cm thick. Coat with olive oil on both sides then sprinkle a little bit of salt for taste.

3.Place eggplant slices in a baking tray and bake for 15 minutes.

4.Spread your tomato paste on top then add your sliced Mozzarella, cherry tomatoes and spread your Shredded cheese on top.

5.Bake for another 10minutes or until Shredded cheese is fully melted.

There you go. Food is ready to enjoy. I had mine with salad.

I actually made 2 different types just for fun. Had ham and mushroom topping on the other one. Tasted just as good.
